Our wide range of raw sausages
As the name suggests, our raw sausages are made from raw (i.e. unheated) meat.
The meat is first chopped, and common salt or a salt such as nitrite pickling salt is added. During the subsequent curing process, the sugar that is naturally contained in the meat is transformed by lactic-acid bacteria into lactic acid and aromatic compounds. This causes the pH to drop. The sausage loses its excess water, which makes it firm and easy to slice. Many types of sausage are then cold-smoked and dried to a greater or lesser extent according to requirements. Our range of raw sausages includes flavoursome cervelat sausages, sausage-meat spreads and Mettwurst soft smoked sausages made of minced pork and beef.
